Whisky Weekends at Cluny Bank Hotel, Forres

We returned to Speyside for the 2002 Spirit of Speyside Whisky Festival, Friday 3rd - Monday 6th May, 2002 at the Cluny Bank Hotel, 69 St. Leonard's Road, Forres.

Whisky Classified was again illustrated by a sponsored malt whisky tasting, followed by a whisky-themed dinner created by resident chef Pamela van Ankeren.  Visit the hotel's website, or contact René Looper for further details.

Resident Chef Pamela van Ankeren and Whisky Writer David Wishart specially created our gourmet whisky-themed dinners for the Spirit of Speyside Whisky Festival.  We reproduce below a sample menu.

Festival Gourmet Menu

Welcome Aperitif: the "Whisky Classified" Cooler
(with Cutty Sark Scots Whisky and Thorncroft Pink Ginger Cordial)

A duo of Lemon Sole and Spey Salmon served on a Speyside malt whisky sauce and a crisp mixed salad with a lemon and mustard vinaigrette
(with Benromach Speyside Malt Whisky)

Three Mustards and Cream combined to a mild velvet Soup with Clyde Valley Croutons, served with crusty bread and garlic herb butter
(with Auchentoshan Lowland Malt Whisky)

Medallions of Scotch Wild Venison with a sharp Islay malt whisky tang, served with Roast Potatoes, Glazed Sesame Carrots and Balsamic Red Cabbage with Apple
(with Laphroaig Islay Malt Whisky)

 Caramelised Peach and a Rich Mousse of Cream Cheese with a Highland Orange Whisky Sauce
(with Ben Nevis Highland Malt Whisky)

Freshly Brewed Coffee with your choice of ~~
 Highland Cream (Drumgray Highland Whisky Liqueur) or
 Orcadian Dream (Highland Park Orkney Malt Whisky)

Alongside each course was served a sample of malt whisky that illustrates the range of cardinal flavours described in Whisky Classified.  David Wishart guided the diners through the flavours, adding notes on the character of each whisky and its history.
Distillers who support David's work contributed all the whiskies used in the tasting: Aberlour, Auchentoshan, Ben Nevis, Benromach, Dalmore, Drumgray Whisky Liqueur, Glenfarclas, Glenfiddich, Glengoyne, Highland Park and Laphroaig.
